Tergeste (PDO) is the name of an olive oil with Protected Designation of Origin from the area around Trieste, in North-East Italy, right on the border with Slovenia. The province of Trieste is suitable for olive cultivation for its geographical location with the influence of the Adriatic sea making the local climate similar to southern regions. The number of mills authorized in the province of Trieste are 6 and producers over five hundred, but only a dozen of these now use the mark to Protected Designation of Origin "Tergeste" for the marketing of extra virgin olive oil. The native olive "Bianchera", variety known for its high oil yield, must not be less than 20 percent of cultivated plants. The oil is obtained which is rich in polyphenols, with a fruity aroma and taste bitter and spicy that vary over time and how to harvest the olives. Other local indigenous varieties are the "Carbona", mainly located in the municipality of Muggia, the "Buga" and "Drobniza" spread mainly in San Dorligo Valle / Dolina, which serve mainly as pollinators.
