The Caciocavallo Ragusano (Cosacavaddu in Sicilian) is an Italian cheese  with Protected Designation of Origin. It is available only in the province of Ragusa and it is made with milk of the Modica breed of cows. The ragusano is a semi-hard cheese made of spun paste produced exclusively with cow's milk. The shape is oval or truncated cone with or without head. The weight of each form is between 1 and 2.5 kg. The crust is thin, smooth, strong straw color.
