Olives have been cultivated in the Bajo Aragón area since ancient times and this is one of the areas where some of the oldest olive trees in Spain are found, some over a thousand years old. The majority of estates in the area are family-owned, with an extension of less than 20 hectares. Another distinctive feature is the use of the Empeltre olive variety, inidgenous of the Bajo Aragón. Empeltre olives must be used in a proportion of at least 80% in the production of Bajo Aragón olive oil, with Arbequina and Royal varieties never surpassing the 20%.
