Description

This excellent olive olive is made with olives of the Argudell and, to a lesser extent, Corivell varieties, both native to the Empordà region of Catalonia. 

Our olive trees are subjected to rigorous environment- friendly phytosanitary control. Harvesting is done by hand, selecting the finest fruits at the ideal moment of ripeness. To prevent any deterioration, they are immediately transported to the oil mill and pressed on the same day. The best oil, which conserves to the full its sensory characteristics, is the oil from the first pressing. This is what makes Oli de Pau so good. Its special flavour, body and character are given to it by the combination of the latest technological advances with the most traditional methods. 

Tasting notes: Green in colour and fruity in flavour, of great intensity. Complex and well-balanced, slightly sweet and with a good proportion of bitter and spicy nuances, and slightly astringent. The high content of polyphenoles emphasises its complexity. Predominant aromas of new-mown grass, fruits (apple, ripe banana, nuts) and vegetables (artichoke, tomato), and also reminiscences of anise and fennel.
