Description
It is produced from the sweet Pedro Ximenez grape variety. It is aged in American oak barrels for several years following the traditional system of Criaderas and Soleras. The Pedro Ximenez grape is left to dry in the sun giving a sweet aroma to this special Sherry Vinegar. The colour has the rich brown tones of carob and it is extraordinarily aromatic. It has a complex taste which is both smooth yet bitter with body and depth.
