Kalamon olives are commonly known as kalamata olives. They are a large black edible olive with a rich and fruity flavour
Our family harvest our olive trees by hand every December. The olives are treated with a solution of salt and water (brine) and when they are ready we preserve them in our extra virgin olive oil.
Of course you can, and you should, use the extra virgin olive oil in the jar to dress your favourite salads.
